The "Green Toque": Gastronomy that cooks regionally and organically
When the sun disappears over the rooftops of Fiss in the early evening, tranquility descends on the Chesa Monte Hotel. The kitchen smells of fresh herbs and hearty cheese – aromas that are as authentic as the hotel itself. The Chesa Monte is one of two hiking hotels in Tyrol that has been awarded the Green Toque, a seal of quality for cuisine with attitude.
For more than three decades, the Grüne Haube has stood for a clear philosophy: cooking in harmony with nature. The Hotel Chesa Monte offers two different 6-course menus every day. Both focus on regional and seasonal foods, always without ready-made products and flavor enhancers. However, one menu is cooked according to the Green Toque guidelines and uses almost exclusively organic products. This allows guests to consciously support the philosophy of organic farming through their menu choices.
Cooking according to the rules of the Green Toque sounds simple, but in a hotel business it is a daily decision. Because those who cook with the Green Toque consciously choose the more laborious path – without flavor enhancers, without ready-made products, with respect for what grows.
Our cuisine should be light and powerful at the same time. We want our guests to feel how good real food is for them after a hike.
Your chef at Hotel Chesa Monte
The hotel gets its bread and pastries from a local baker, vegetables are supplied by an organic farmer from the Upper Inn Valley, and herbs are grown not far from the hotel. Instead of excess, care prevails – every dish tells a story about Tyrol.
For hiking guests, this means more than just healthy eating. It is a way of life: the connection between exercise in the mountains and conscious enjoyment afterwards. A plate that tastes as good as the landscape looks – clear, fresh & unadulterated.
The Hotel Chesa Monte shows that sustainability is not a trend, but an attitude. And that a hiking hotel in Tyrol is most impressive when it has both feet firmly planted on local soil – including in the kitchen.
