I am thrilled. Thrilled by how cool sustainability can actually be. It's great when locals cooperate for the benefit of the place and nature—like the four-star superior hiking hotel in the Dolomites, Excelsior Dolomites Life Resort, and Georg with his vegetable garden "Urt da Ras—Mountain Veggies."

On the other side of San Vigilio lies Georg's wonderful vegetable garden: "Urt da Ras – Mountain Veggies". Georg doesn't just grow vegetables, he specializes in old regional varieties that thrive in San Vigilio at an altitude of 1,250 m in the alpine climate – nutrient-rich, untreated, and full of flavor. These vegetables will nourish you during your stay at the hiking hotel in the Dolomites. They grow in the soil you hike over, are bathed in the sun that warms your face, and watered by the clouds that linger in the Dolomites. Head chefs Karol and Reni love to cook with completely local, seasonal, and organic ingredients. They want the taste of your vacation to remain unique in your memory. Vegetables alone do not make regional cuisine—that much is clear. That's why the meat comes fresh from the Call family butcher shop, and the other ingredients also come from local farmers.
On the one hand, of course, there are the short transport routes, natural cultivation and preservation of old varieties. But on the other hand, it also means that Georg has a secure income as a farmer. This counteracts rural exodus, promotes small-scale agriculture, actively shapes village life, and keeps added value in the local area. This is also important for the long-term well-being of our world.
