Sustainable hotel in South Tyrol
If you are looking for a sustainable hotel in South Tyrol, the Drumlerhof offers more than just environmentally friendly measures. Here, sustainability is not an idea imposed from outside, but has grown organically – out of farming tradition, a sense of responsibility towards nature, and the family's history.
Sustainability that tastes good
It all began at the Signaterhof on the Ritten. This is where host Stefan Fauster grew up. This is where he was shaped: by the rhythm of the seasons, by working the land, by the value of authenticity.
As a passionate farmer, he now runs the Signaterhof. What comes from there enriches the cuisine of the Drumlerhof – not only in the form of fresh ingredients, but also through an attitude that combines agriculture, enjoyment, and mindfulness. The bacon is allowed to mature for two years in the stone cellar. The farm's own sparkling wine is produced directly at the Signaterhof, from the grape to the bottle. And the fungus-resistant Johanniter grape grows entirely without chemicals – an example of how sustainable farming begins on a small scale.
They ate what the farm produced. More was never necessary.
Stefan
Your host at the Drumlerhof hiking hotel.
Not a concept, but a tradition
At the Drumlerhof, sustainability is not just a concept, but a living tradition. As a child at the Signaterhof, Stefan was used to eating whatever the farm had to offer. More was never necessary. This consistent combination of origin, quality, and honesty makes the Drumlerhof a sustainable hotel that offers its guests more than just comfort: namely, clarity, transparency, and genuine values. This also means that not everything comes from the Signaterhof. The Fauster family consciously works with other regional businesses, such as the Gemeinschaftsacker Taufrisch in Sand in Taufers or with long-standing partners in the surrounding area. Because authenticity also means recognizing and appreciating the limits of one's own roots.
In addition to agriculture, Stefan has always had a passion for hiking. As a certified hiking guide, he knows the quiet paths of South Tyrol as well as the special places in nature that are not listed in guidebooks. Hiking in South Tyrol is not just an activity for him—it is part of his attitude to life. He loves to share this passion with his guests. And so the philosophy of the Drumlerhof can not only be tasted, but also experienced—step by step, out in the mountains. If you want to vacation in a sustainable hotel that doesn't just talk about sustainability but lives it, the Drumlerhof is the right place for you. And if you also want to discover the unspoiled landscape while hiking in South Tyrol, you will find a good starting point here – with real roots.
