It all began at the Signaterhof on the Ritten. This is where host Stefan Fauster grew up. This is where he was shaped: by the rhythm of the seasons, by working the land, by the value of authenticity.

 

As a passionate farmer, he now runs the Signaterhof. What comes from there enriches the cuisine of the Drumlerhof – not only in the form of fresh ingredients, but also through an attitude that combines agriculture, enjoyment, and mindfulness. The bacon is allowed to mature for two years in the stone cellar. The farm's own sparkling wine is produced directly at the Signaterhof, from the grape to the bottle. And the fungus-resistant Johanniter grape grows entirely without chemicals – an example of how sustainable farming begins on a small scale.

The Fauster family consciously works with other regional businesses, such as the Gemeinschaftsacker Taufrisch in Sand in Taufers or with long-standing partners in the surrounding area. Because authenticity also means recognizing and appreciating the limits of one's own roots.
