Where does Törggelen come from?
Törggelen – what is it exactly? A culinary delight, believe me! The unusual name comes from the Latin word torculus, meaning wine press. Originally, in late autumn, city dwellers and innkeepers would visit the winegrowers to taste the new wine in the press house. People were curious – about the taste of the young wine and, of course, about the latest gossip. To prevent people from getting drunk too quickly, simple but hearty food was served: roasted chestnuts, nuts, sweet doughnuts, bacon, smoked sausages, and rye bread. This turned wine tasting into a convivial celebration – the origin of today's Törggelen. Today, the custom is as alive as ever, but each region interprets it in its own unique way.
At the Jaufentalerhof, Dunja and Florian combine traditional Törggelen with exercise and nature experiences – true to the motto: First hike, then enjoy. After all, what could be better for a hiking vacation in South Tyrol than a leisurely autumn hike with a culinary destination?
The couple take their guests on a guided tour to the hotel's own Rauschtalhütte, where the aroma of roasted chestnuts and fresh Germkiachler from Grandma's recipe book is already in the air. They serve traditional South Tyrolean dishes: Schlutzkrapfen, Blattler with cabbage, spinach, Bauernbrat'l, grapes – and, of course, a good glass of wine. What exactly are Schlutzkrapfen and Blattler? The best thing to do is try them for yourself – because some things cannot be described, you have to taste them.
