Recipe with blueberries: Wipptaler Krapfen

The Aktivhotel Panorama is located in the idyllic Pflersch Valley, a side valley of the Wipptal in South Tyrol. It is a true paradise for hiking enthusiasts and nature lovers, surrounded by majestic peaks such as the striking Tribulaun (3,097 m), the snow-covered Weißwand (3,016 m) and the imposing Amthorspitzen (2,748 m). A speciality of the hotel are the traditional Wipptal doughnuts, which are filled with fresh ingredients from the region depending on the season.

Wipptal doughnuts with blackberries

In summer, aromatic blueberries from the surrounding forests – affectionately known as "blackberries" in South Tyrol – are used. From an early age, Alexandra Windisch, the hostess, baked doughnuts together with her mother and grandmother. They taught her how to prepare this delicacy to perfection. Anyone who tries this recipe with blueberries will bring a piece of South Tyrol directly into their home – and can experience the taste of the mountains on their tongue.

Ingredients for the dough: (approx. 10 doughnuts)

  • 200 g wheat flour
  • 70 g rye flour
  • 20 g melted butter
  • 100 ml lukewarm milk
  • 1 egg yolk
  • 50 ml cream
  • 10 ml schnapps
  • 1 pinch of salt

Ingredients for the filling:

  • 1 lemon peel
  • 10 ml rum
  • 200 g curd cheese
  • 4 tablespoons sugar
  • 150 g blueberries
  • 30 g breadcrumbs

Additional ingredients:

  • frying fat for deep-frying
  • icing sugar for dusting

Preparation

For the dough ...

... mix all ingredients and knead into a smooth dough. Cover and leave to rest for about an hour.

 

For the filling, mix the quark, sugar, rum and blueberries with a little lemon zest and, if necessary, bind with breadcrumbs and leave to stand for a while.

Completion:

Roll out the dough with a rolling pin into thin sheets measuring approx. 12 x 8 cm. Spoon the filling onto the dough sheets. Brush the edges of the dough with a little water, fold over and press the edges together firmly. If desired, roll out or cut out shapes using a doughnut cutter. Fry the doughnuts in very hot fat (190–200 degrees) for 1–2 minutes. Drain on a kitchen towel, sprinkle with icing sugar and serve.
