Thanks to her extensive knowledge and passion for herbs, as well as Grandma Christine's cookbook, the warm-hearted hotelier preserves the tradition of making sage honey. Ingredients

  • 250 g fresh sage leaves
  • 2 litres of water
  • 2 kg brown sugar
  • 3 organic lemons, sliced

... the lemon slices and water together and leave to stand overnight. After the infusion time, strain the sage broth through a fine-mesh sieve and squeeze well. Then simmer gently with 2 kg of brown sugar for approx. 4-5 hours. Pour the hot liquid into sterilized jars and seal immediately. Taking 1-5 teaspoons of sage honey throughout the day can relieve coughs and sore throats. Honey is said to have anti-inflammatory and antibacterial properties. It tastes best with butter on fresh, crispy farmhouse bread. Stored in a cool, dark place, sage honey will keep for at least one year.
