Ladin for the ears and the palate

Recipe: Ladin Tultres

Alongside German and Italian, Ladin has shaped life in the Dolomite valleys for centuries. Around 30,000 people still speak this Rhaeto-Romanic language today. In the Gadertal Valley, Ladin is more than just a means of communication: it is part of the local identity and, for many locals—such as the Call family, who run the Excelsior Resort—it is even their mother tongue. Thanks to South Tyrol’s autonomy, the rights of this language group are protected—an important prerequisite for the preservation and further development of the “Ladin” cultural heritage.

A perfectly prepared delicious soup awaits you at the Wanderhotel Excelsior Dolomites Resort in the Dolomites.

Ingredients for the dough

  • 250 g rye flour
  • 250 g wheat flour
  • 30 g butter (melted)
  • 3 eggs
  • 1/2 l lukewarm milk
  • 2 tbsp oil
  • salt

Ingredients for the filling:

  • 200 g cooked spinach (well squeezed & finely chopped)
  • 150 g quark – alternatively ricotta
  • 1/2 onion, finely chopped
  • 1 tbsp butter
  • Chives, salt, pepper

Preparation

For the dough ...

... Knead all the ingredients thoroughly into a smooth dough, cover, and chill for about 1 hour.

 

For the filling ...

... Sauté the onion in butter until translucent. Add the spinach and sauté briefly. Remove from heat and mix with quark or ricotta. Season to taste with chives, salt, and pepper.

Completion

Roll out the dough (to about 1–2 mm thick) and cut out circles about 10 cm in diameter. Place a small spoonful of filling on one half of each dough circle, moisten the edges with water, and place a second dough circle on top. Press the edges together firmly.

 

Fry in hot sunflower oil or clarified butter until golden brown on both sides. Drain on paper towels and serve hot.

Tip:

Traditionally, Tultres are often served with a hearty barley soup called Panicia.
