Floris' recipe for honey schnapps

Have you ever heard of uncapping wax? It is a particularly sought-after product from beekeeping. Flori, the host at the South Tyrolean hiking hotel Jaufentalerhof, is a passionate beekeeper and uses uncapping wax to make a delicious honey schnapps, the recipe for which he reveals exclusively here.

The uncapping wax—also known as virgin wax—is partly freshly produced by the bees' wax glands and partly used from existing honeycomb construction, which protects the mature honey from humidity and preserves it. If a honeycomb is a pot full of honey, then the virgin wax is the lid. To extract the honey from the honeycomb, the beekeeper removes the wax with a uncapping fork – some of the honey remains on the wax, which later ends up in honey schnapps. This is partly because, in addition to honey, the wax also contains the following substances, which dissolve in alcohol during the production of honey schnapps:

 

  • All the ingredients of the wax
  • All the ingredients of the honey
  • One to 4 percent pollen and more, depending on the type of honey in the honeycomb
  • 0.5 to 3 percent propolis and more, depending on the type of honey and the time of harvest

What you need

  • 1 litre of drinking alcohol 96%
  • 1 kg of uncapped honey – ask a beekeeper in your area
  • 1/4 litre of bourbon whisky
  • Distilled water
  • an alcohol meter

The alcoholic beverage ...

... pour over the uncapped honey so that it is well covered. Leave the mixture to stand for a month & stir daily so that the honey, pollen, propolis and all the beneficial active ingredients dissolve. Then add the bourbon whisky and leave to stand for another two weeks, stirring daily.

Sieve everything through a very fine filter and add distilled water to reduce the alcohol content to 40%.

... I would want to live with Flori and Dunja. In the quiet valley head of South Tyrol's Jaufental, there are flowers, forests and nature like nowhere else in the Alps.
