Apple bread – the taste of a hiking vacation in the Vinschgau Valley

The South Tyrolean hiking hotel Vinschgerhof is nestled among the apple orchards of the Vinschgau Valley and is known for a special delicacy: homemade apple bread, which is considered the perfect snack for on the go. Recipe for apple bread

As the daughter of an apple farmer, Inge Pinzger, hostess at the Vinschgerhof, has a close connection to the fruits of her homeland. She proudly says, "There are no better apples than those from the Vinschgau Valley. That's why our guests still get our 'family apples' to this day." These apples are also used to bake traditional apple bread—a healthy, nutritious, and tasty snack that is an essential part of any hiking vacation in the Vinschgau Valley. Here, Inge shares her recipe for apple bread with you.

Ingredients

  • 500 g whole wheat flour
  • 400 g apples
  • 25 g yeast
  • 1 pinch of sugar
  • 250 ml milk
  • 100 g ground walnuts
  • 50 g melted butter
  • 1 egg
  • 5 g salt
  • 1 pinch of cinnamon

Preparation

Flour ...

... pour into a bowl and make a well in the centre. Mix the yeast with lukewarm milk, sugar and flour and pour into the well. Cover and leave to rise in a warm place for about 30 minutes. Add the remaining milk, nuts, butter, egg, cinnamon and salt and knead into a firm dough, then leave to rise for another 30 minutes.

Coarsely grate the apples and mix into the dough, shape into a loaf, place on a baking tray lined with baking paper and cut a cross into the top. Leave to rise for 20 minutes and bake in a preheated oven at 200 °C for 35–40 minutes.
